Carmen’s Chicken and Cravy Recipe

A cozy, old-fashioned comfort dish featuring tender pan-fried chicken smothered in rich, homemade gravy. Perfect over mashed potatoes, rice, or biscuits!
📝 Ingredients
For the Chicken:
4–6 bone-in, skin-on chicken thighs (or drumsticks)
1 cup all-purpose flour
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
½ tsp onion powder
3–4 tbsp vegetable oil (for frying)
For the Gravy:
3 tbsp leftover pan drippings (or butter if needed)
3 tbsp all-purpose flour
2–3 cups chicken broth (warm)
½ tsp salt (adjust to taste)
½ tsp black pepper
Optional: ½ tsp poultry seasoning or thyme
👩‍🍳 Instructions
1️⃣ Season & Dredge
Pat chicken dry.
Mix flour with salt, pepper, garlic powder, paprika, and onion powder.
Coat chicken thoroughly in the seasoned flour. Shake off excess.
2️⃣ Fry the Chicken
Heat oil in a large skillet over medium heat.
Cook chicken skin-side down first.
Fry about 6–8 minutes per side until golden brown and nearly cooked through.
Remove chicken and set aside (keep drippings in the pan!).
