Country Fried Pork Chops with Bacon Gravy

Crispy, golden pork chops smothered in a creamy bacon gravy — pure Southern comfort food.

🛒 Ingredients

Pork Chops

  • 4 bone-in pork chops
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Oil for frying

Bacon Gravy

  • 5–6 slices bacon, chopped
  • 2 tbsp flour
  • 1½ cups milk (or more for thinner gravy)
  • Salt & black pepper to taste
  • Optional: pinch of cayenne

👩‍🍳 Instructions

  1. Marinate the pork chops
    Place pork chops in buttermilk and refrigerate for 30 minutes–2 hours.
  2. Prepare coating
    In a bowl, mix flour, salt, pepper, paprika, and garlic powder.
  3. Bread the pork chops
    Remove chops from buttermilk, let excess drip off, then dredge well in seasoned flour.
  4. Fry
    Heat oil in a skillet over medium heat.
    Fry pork chops 4–5 minutes per side until golden brown and cooked through.
    Remove and keep warm.
  5. Make bacon gravy
    In the same pan, cook bacon until crispy.
    Remove excess grease, leaving about 2 tbsp fat.
    Stir in flour and cook 1 minute.
    Slowly whisk in milk until smooth.
    Season with salt, pepper, and cayenne. Simmer until thick.
  6. Serve
    Spoon hot bacon gravy over pork chops. Garnish with parsley if desired.
