What You’ll Need

🍬 2 cups granulated sugar

🥛 1/2 cup evaporated milk

🧈 1/4 cup butter

🌽 1/2 cup light corn syrup

🍦 1 teaspoon vanilla extract

🥚 2 large egg whites

🍓 1 cup assorted fruit jelly candies, cut into small pieces

🥜 1 cup chopped pecans or walnuts

🧂 Pinch of salt

👩‍🍳 How to Make It

1️⃣ Prepare the Pan

Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal.

Lightly butter the parchment.

2️⃣ Cook the Sugar Mixture

In a heavy saucepan, combine the sugar, evaporated milk, butter, corn syrup, and salt.

Cook over medium heat, stirring until the sugar dissolves.

Continue cooking until the mixture reaches about 238–240°F, the soft-ball stage.

3️⃣ Beat the Egg Whites

While the syrup cooks, beat the egg whites in a large clean bowl until they form stiff peaks.

4️⃣ Slowly Add the Hot Syrup

With the mixer running on low, very carefully drizzle the hot syrup into the egg whites.

Gradually increase the speed and beat until the mixture becomes thick, fluffy, and slightly glossy.

This can take several minutes.

5️⃣ Add the Good Stuff 😍

Beat in the vanilla.

Fold in the chopped jelly candies and pecans or walnuts.

6️⃣ Spread & Set

Immediately spread the mixture into your prepared pan.

Smooth the top and let it cool completely at room temperature, or refrigerate until firm.

7️⃣ Cut Into Pieces

Lift the candy from the pan using the parchment.

Cut into small squares with a lightly buttered knife.

✨ Make It Your Own

🍓 Use strawberry or raspberry jelly candies

🍊 Add orange-flavored pieces

🍋 Mix in lemon or citrus candies

🥜 Try pecans, walnuts, or almonds

🍫 Dip the finished pieces halfway in chocolate

💡 A Little Tip

Work fairly quickly once the nougat is ready.

The mixture becomes thicker as it cools, so having your pan, jelly pieces, and nuts prepared ahead of time makes everything much easier.

And because you’re working with very hot candy syrup, use caution and keep children away from the cooking area.

❤️ A Little Taste of the Past

There’s something special about homemade candy.

It takes a little patience, a little stirring, and a little care—but the result is something you simply can’t get from a store-bought bag.

Put a few pieces into a pretty tin, tie it with ribbon, and you have the kind of homemade gift that feels wonderfully old-fashioned. 🎁🍬
